Baked Rice Pudding

Ingredientes

  • 1 c. uncooked rice
  • 1 c. sugar
  • 1/4 Tbsp. cinnamon
  • 4 c. lowfat milk
  • 4 x Large eggs
  • 1 dsh mace or possibly nutmeg
  • 2 Tbsp. butter or possibly margarine Grated rind or possibly of 1 lemon

Direcciones

  1. Soak rice in 2 c. of lowfat milk for 2 hrs. Add in remaining lowfat milk to rice and cook for 20 min over low heat. Set aside. Place butter in a 2 qt casserole and work in sugar till soft. Beat Large eggs and mix with flavouring spices. Mix rice mix, butter mix and egg mix together. Pour into a casserole and bake for 45 min at 350.
