Baked Scallops
When I am home alone, there is nothing I like more than to make something with scallops, and when you’re cooking for one, it’s a pretty cheap meal! This was so easy, I hate to even post it as a “recipe”, but then I thought that there may be others out there looking for a good, easy scallop “recipe”…
Baked Scallops
Ingredients:
- 3 scallops (or more if you're going to share)
- 1/3 cup butter
- 2 cloves garlic
- 1 shallot-minced
- 1 teaspoon Herbes de Provence
- 1/2 teaspoon salt
- 1/2 cup dry white wine
- 1/4 cup Panko bread crumbs
Directions:
Preheat oven to 425 degrees. In a small skillet, melt butter over medium heat, add whole garlic cloves and shallot. Cook for about 5 minutes or until shallots are tender; remove garlic cloves. Add in the Herbes de Provence, salt and wine, cook for another 3 minutes.
Rinse the scallops and pat dry. Place in a shallow dish and pour the butter into the dish. Sprinkle the bread crumbs over the top. Bake for about 8 minutes, then turn on the broiler and watch closely about 2 minutes, remove when the bread crumbs are nicely browned.
