Receta Baked Shrimp Scampi and Barbecue Glazed Shrimp

Having shrimp for dinner always feels luxurious and special. Considering how quickly they cook, it is a great way to bring everyone to the table for a special meal in the middle of the week. This is a recipe that Grandpa makes on the grill, fashioning little foil boats of shrimp and sauce, on summery days when the weather is beautiful and the family is all together. Maybe that’s why it always feels like a special occasion to come home with that big bag of fresh gulf shrimp.

Grandpa’s Barbecue Shrimp

serves 2-3, prep 10 min, cook 15 min

1 pound large (10-14 size) uncooked shrimp, peeled and deveined

4 tbsp butter

2 cloves garlic, minced

1/4 cup barbecue sauce

2 tbsp parsley, minced or 1 tbsp dried

salt and pepper

Preheat broiler. Place butter in a medium, shallow oven-proof dish and place in oven to melt.

Remove dish and place shrimp in the melted butter.

Sprinkle with minced garlic and drizzle sparingly with barbecue sauce.

Sprinkle with parsley, salt and pepper.

Broil shrimp 5-7 minutes or until pink and sauce is bubbly, remove from the heat and turn the shrimp.

Broil an additional 5-7 minutes or until shrimp are firm.

Toss shrimp in sauce before serving.

Why have shrimp one way when you can have shrimp two ways? Or three, really, since we love a perfectly cooked cocktail shrimp as much as anything. Since we were doing one shrimp dish in the oven we made a scampi style dish alongside it. The shrimp turn out perfectly tender and the lemon butter sauce is rich with white wine and garlic. Be sure to serve with some crusty bread or pasta for sauce soppin’.

Sprinkle with parsley, salt and pepper. Cover with lemon slices.

Broil shrimp 10-15 minutes or until firm.

Serve with rice or pasta, spoon sauce over all.
