Baked Spinach (Sformato Di Spinaci)

Ingredientes

  • 1 3/10 kg spinach tough stalks removed
  • 2 x Large eggs
  • 400 ml double cream
  • 100 gm parmesan freshly grated
  • 1/2 tsp grated nutmeg sea salt and freshly grnd black pepper

Direcciones

  1. Preheat the oven to 190C/375F/Gas 5.
  2. Beat the Large eggs and cream together for a minute in a large bowl.
  3. Add in the parmesan nutmeg pepper and a little salt.
  4. Blanch the spinach in plenty of boiling salted water for 1 minute and drain well.
  5. Chop roughly and mix well with the egg and cream mix.
  6. Pour into a medium sized baking dish: the mix shouldn't be less than 4cm deep.
  7. Place uncovered in the top of the preheated oven for 30 min.
  8. Serve warm.
  9. The top should be crisp while the underneath should still be slightly creamy.
  10. Serves 6
