Ingredientes

  • 4 lrg tomatoes (about 3 lbs.)
  • 3 lrg yellow bell peppers (about 1 1/2 lbs.)
  • 1 med onion sliced
  • 6 Tbsp. extra virgin olive oil
  • 1 1/2 tsp dry basil crushed
  • 1 tsp salt
  • 1/4 tsp pepper
  • 10 x pitted black olives quartered

Direcciones

  1. Cut the tomatoes into 1/2" wedges. Cut the peppers lengthwise into 1/4" julienne slices. In a baking dish toss the tomato, peppers slices and onion slices with the extra virgin olive oil and basil. Sprinkle with the salt and pepper. Bake in a 300 degree oven for 1 1/2 hrs, till all are very soft. Remove from the oven and let cold. Add in the olives and stir well. Cover and refrigeratefor 2 or possibly 3 days before serving.
  2. Rayna Says: This is a recipe which can be made ahead, it is best after chilling for a few days, making it ideal for picnics and cookouts. It makes a nice relish type topping for grilled meats or possibly fish.
