Receta Baking | No- Bake Fruit & Nuts Chocolate Brownie – Quick, Easy and Healthy Treat
‘So much chocolate. So little time‘! Yes, that’s what my children say whenever there is a chocolate dessert on their menu. Wish they said the same for studies also. I often take advantage of their chocolate love by sneaking in healthy foods which in its normal form are non acceptable. Oats, peanuts, almonds, dates, prunes and the list is endless. Most of the recipes on Lite Bite revolve around my endeavor to find out ways to make the food kids friendly, more healthy and also taste scrumptious at the same time.
This No-bake Prunes chocolate brownie is one such experiments during the weekends. All the three of us except my daughter love to munch upon dried prunes, this recipe is to cajole my daughter to say yes to Prunes. And I did succeed in my mission
Ingredients;
- 1/2 cup chopped Prunes and apricots
- 1/2 cup cocoa powder
- 1/2 cup quick cooking oats
- 1/4 cup almonds
- 1/4 cup honey
- 2 tbsp peanut butter
- 50 gms chocolate bar
Method; Line a flat baking tray with aluminum foil. Chop almonds and prunes roughly. Heat a pan and dry roast the almonds for 5 minutes on low flames. Add cooking oats and fry for another 2 minutes. Take care that almonds and oats don’t burn.
Grind roasted almonds and oats for a few seconds in a blender. Add prunes and pulse it again.
Heat honey on low flame and add peanut butter, chocolate bar, cocoa powder and cook for 2 minutes till all the ingredients mix well and make a creamy chocolate sauce.
Add the ground almonds, oats and prunes to the wet chocolate sauce and mix well.
Pour the brownie batter (which is of semi solid consistency) in the lined baking tray and flatten the top with the back of a spoon or with your hand.
Refrigerate the baking tray for 2-3 hours.
Take out and slice the Prune brownies.
Keep the sliced Prune brownies in an air tight container and separate each brownie with a small butter paper to avoid sticking.
Refrigerate the box, as it will keep the brownies stay fresh for a month or long.
Wrap individual Prune brownie in an aluminium foil and pack it as snack box treat for kids or as a healthy gift option during festivals.
Dust the Prune brownies with drinking chocolate or just plain white sugar powder before serving.

Notes;
Add nuts of your choice in the recipe. I added dried Apricots also in the recipe.
Grind Prunes and almonds before adding if you dislike chunks in your brownie.
Use good quality cocoa powder for best results.
You can replace prunes with dates and make these no-bake Brownies.
