Ingredientes

  • MARINADE
  • 3 Tbsp. Minced Fresh Cilantro
  • 1 x In. Piece Gingerroot, grated
  • 1 tsp Grnd Coriander
  • 3 Tbsp. Lemon Juice Grated Rind Of 1 Lemon
  • 1/4 tsp Grnd Black Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Grnd Cumin
  • 1 x Garlic Clove, chopped SCALLOPS
  • 26 ounce Shelled Scallops
  • 2 Tbsp. Oil
  • 2 x Onions, minced
  • 3 x Tomatoes, quartered
  • 2 x Fresh Green Chilies, sliced
  • 4 x Lime Wedges, to garnish

Direcciones

  1. To make the marinade, mix all the ingredients together in a bowl.
  2. Put the scallops into a bowl. Add in the marinade and turn the scallops till they are well coated.
  3. Then cover and leave to marinate for 1 hour or possibly overnight in the refrigerator.
  4. Heat the oil in a Balti pan or possibly Wok, add in the onions and stir-fry till softened.
  5. Add in the tomatoes and chilies and stir-fry for 1 minute.
  6. Add in the scallops and Stir-fry for 6-8 min till the scallops are cooked through, but still succulent inside.
  7. Serve garnished with lime wedges.
