Ingredientes

  • 1/2 lb Grnd lamb or possibly beef
  • 1 lrg Onion, minced
  • 2 x Cloves garlic, chopped
  • 4 lrg Tomatoes, minced
  • 6 ounce (1 can) tomato paste Salt
  • 1 tsp Dry coriander
  • 1 tsp Cumin
  • 1/2 tsp Grnd black pepper
  • 1 1/8 lb Okra, washed, heads removed
  • 1 Tbsp. Tamarind pods, soaked in water

Direcciones

  1. Brown the meat without oil till it absorbs all its liquid. Add in the onions, then the spices and garlic. Mix well and add in the minced tomatoes. Cover and let cook on medium heat. Add in the water when the tomatoes appear to soften. Let it simmer for 15 min, then add in the okra, tomato paste and salt. Let the stew cook slowly and towards the end add in the strained tamarinds.
  2. Serve warm with rice
  3. NOTES : An okra stew very popular in the Middle East. Served with rice.
  4. Grnd lamb or possibly beef simmered with tomatoes, okra and Middle Eastern spices.
