.%20I%20ate%20a%20few,%20put%20a%20small%20bunch%20in%20the%20freezer,%20but%20was%20still%20left%20with%20a%20multitude%20of%20bananas%20to%20get%20through.%3C/p%3E%3Cp%3EAlright,%20I'm%20exaggerating,%20there%20was%20only%20a%20few%20left%20in%20the%20bowl%20by%20this%20stage.%20I%20was%20getting%20sick%20of%20the%20smell%20of%20overripened%20bananas%20hitting%20me%20upon%20entering%20the%20house%20though,%20and%20I%20really%20didn't%20fancy%20making%20the%20obligatory%20banana%20bread.%3C/p%3E%3Cp%3ESo%20I%20pondered%20over%20how%20to%20use%20them%20in%20a%20savoury%20dish%20instead.%20Banana%20Curry%20I'd%20already%20done,%20so%20that%20was%20out.%20I%20wondered%20about%20putting%20it%20in%20some%20form%20of%20pasta%20bake,%20but%20that%20just%20sounds%20rather%20wrong.%3C/p%3E%3Cp%3ETurning%20to%20my%20fridge%20for%20answers,%20I%20spotted%20a%20lone%20aubergine%20that%20needed%20using%20up.%20Ah,%20that'll%20do.%3C/p%3E%3Cp%3ESince%20the%20bananas%20were%20pretty%20ripe,%20I%20decided%20not%20to%20cook%20them%20through%20with%20the%20veg,%20for%20fear%20of%20it%20turning%20overly%20soggy%20and%20sweet.%20So%20I%20gently%20fried%20the%20aubergine%20with%20some%20courgette%20in%20lemon%20juice,%20then%20gently%20stirred%20through%20the%20banana%20afterwards%20to%20warm%20through.%3C/p%3E%3Cp%3EThe%20base%20of%20the%20salad,%20as%20given%20away%20by%20the%20title%20is%20simply%20cous-cous.%20Chickpeas%20are%20mixed%20in%20to%20add%20another%20layer%20of%20texture.%20You%20can%20then%20either%20mix%20this%20altogether%20with%20the%20lemony%20banana%20veg%20before%20serving%20%E2%80%93%20or%20dish%20up%20the%20chickpea%20cous-cous%20first,%20and%20spoon%20the%20banana%20goodness%20on%20top.%3C/p%3E%3Cp%3ETrust%20me,%20it%20works!%3C/p%3E%3Cp%3E1.%20Put%20the%20cous-cous%20in%20a%20large%20bowl%20with%20the%20hot%20stock.%20Cover%20and%20leave%20to%20sit%20for%205%20minutes,%20then%20mix%20in%20the%20chickpeas.%3C/p%3E%3Cp%3E2.%20Add%20the%20oil%20to%20a%20hot%20pan,%20then%20gently%20fry%20the%20diced%20aubergine%20and%20courgette%20for%20a%20few%20minutes.%20Squeeze%20over%20the%20lemon%20juice.%3C/p%3E%3Cp%3E3.%20Take%20the%20pan%20off%20the%20heat,%20then%20add%20in%20the%20banana%20slices,%20carefully%20mixing%20through.%3C/p%3E%3Cp%3E4.%20You%20can%20then%20either%20dish%20up%20the%20chickpea%20cous-cous,%20and%20spoon%20the%20banana%20mixture%20on%20top,%20or%20mix%20it%20altogether%20first%20before%20serving.%3C/p%3E%3Cp%3EOther%20veggie%20recipes%20you%20might%20like.%3C/p%3E){kind=link}
