%20series.%20Check%20out%20my%20Q&A%20about%20everything%20from%20Japanese%20food%20to%20some%20unexpected%20results%20of%20creating%20a%20food%20blog.%3C/p%3E%3Cp%3EWhen%20I%20visited%20Belgium%20and%20the%20Netherlands%20in%202011,%20my%20friends%20who%20lived%20there%20were%20all%20raving%20about%20Speculoos%20cookies%20and%20Speculoos%20paste.%20So%20much%20so%20that%20they%20convinced%20me%20and%20Paula%20to%20bring%20one%20weighty%20jar%20of%20Speculoos%20paste%20back%20with%20us%20from%20the%20Netherlands%20to%20California%20(along%20with%20an%20embarrassing%20number%20of%20boxes%20of%20De%20Ruijter%20chocolate%20sprinkles).%3C/p%3E%3Cp%3ETurns%20out,%20we%20also%20could%20have%20just%20waited%20a%20year%20for%20the%20North%20American%20version,%20Biscoff,%20to%20appear%20on%20store%20shelves%20and%20food%20blogs%20everywhere.%3C/p%3E%3Cp%3ESpeculoos%20are%20Belgian/Dutch%20spiced%20shortbread%20cookies%20that%20taste%20kind%20of%20like%20gingerbread%20cookies%20without%20the%20ginger;%20although%E2%80%93%20don%E2%80%99t%20get%20me%20wrong%E2%80%93%20they%E2%80%99re%20delicious!%20Speculoos%20paste,%20though%20not%20the%20most%20appetizing%20title,%20is%20the%20even%20more%20delicious%20spread%20ostensibly%20made%20of%20ground%20up%20Speculoos%20cookies.%3C/p%3E%3Cp%3ESo%20Speculoos/Biscoff,%20which%20has%20the%20robust%20texture%20of%20peanut%20butter%20and%20sugar%20levels%20to%20rival%20Nutella,%20is%20in%20essence%20like%20spreadable%20cookies.%20You%20know,%20cookies%20that%20you%20can%20spread%20on%20cookies,%20or%20bagels,%20or%20toast.%20(If%20you%E2%80%99ve%20never%20spotted%20a%20jar%20of%20Biscoff,%20you%20can%20also%20find%20it%20at%20Trader%20Joe%E2%80%99s,%20where%20it%20goes%20by%20the%20matter-of-fact%20name%20of%20%E2%80%9CCookie%20Butter.%E2%80%9D)%3C/p%3E%3Cp%3EBack%20when%20we%20were%20still%20carefully%20rationing%20out%20our%20treasured%20European%20souvenir%20jar%20of%20Speculoos,%20Paula%20made%20some%20amazing%20Speculoos%20chocolate%20chip%20cookies%20[check%20out%20photos%20of%20the%20cookies%20and%20my%20other%20birthday%20fare%20here],%20adapted%20from%20Smitten%20Kitchen%E2%80%99s%20recipe%20for%20Peanut%20Butter%20Cookies.%20But%20our%20need%20for%20rationing%20the%20stuff%20has%20completely%20flown%20out%20the%20window%20since%20I%20recently%20entered%20a%20giveaway%20on%20Biscoff%E2%80%99s%20facebook%20page%20and%20unexpectedly%20won%20a%20whole%20case%20(8%20jars)%20of%20the%20stuff!%20(Thank%20you,%20Biscoff!)%3C/p%3E%3Cp%3EOf%20course%20we%E2%80%99ve%20been%20giving%20the%20jars%20away%E2%80%93%20because%20consuming%20that%20many%20jars%20of%20%E2%80%9Ccookie%20butter%E2%80%9D%20is%20just%20a%20little%20bit%20disgusting%E2%80%93%20but%20I%20also%20wanted%20to%20take%20advantage%20of%20my%20temporary%20Biscoff%20surplus%20to%20do%20some%20baking.%20And%20since%20Biscoff%20is%20(magically!)%20vegan,%20I%20also%20thought%20I%20might%20as%20well%20try%20my%20hand%20at%20a%20vegan%20recipe.%3C/p%3E%3Cp%3EThis%20recipe%20is%20adapted%20from%20the%20BEST%20EVER%20vegan%20Chocolate%20Banana%20Zucchini%20Bread%20from%20Lauren%20at%20One%20Happy%20Table.%20I%20seriously%20made%20that%20quickbread%20too%20many%20times%20to%20count%20this%20past%20summer,%20but%20since%20it%E2%80%99s%20no%20longer%20quite%20the%20right%20season%20for%20zucchini%20anymore,%20I%20substituted%20walnuts%20and%20cookie%20butter!%20(What?!%20Those%20are%20perfectly%20good%20zucchini%20substitutes%E2%80%A6%20just%20go%20with%20me%20here%20for%20a%20minute.)%3C/p%3E%3Cp%3EBasically%20I%20greatly%20reduced%20the%20sugar%20and%20canola%20oil%20from%20the%20original%20recipe,%20and%E2%80%93%20like%20I%20said%E2%80%93%20substituted%20walnuts%20and%20Biscoff%20for%20the%20zucchini.%20These%20muffins%20were%20banana-chocolately-cookie-flavored%20perfection.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EBanana%20Biscoff/Speculoos%20Muffins%20(Vegan)%3C/p%3E%3Cp%3E(Adapted%20from%20One%20Happy%20Table%E2%80%99s%20Chocolate%20Banana%20Zucchini%20Bread.)%3C/p%3E%3Cp%3E(Makes%2012%20small%20muffins)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Pre-heat%20the%20oven%20to%20350%20degrees.%20Line%20a%20muffin%20tin%20with%20twelve%20muffin%20wrappers%20or%20grease%20the%20tin.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20bowl,%20whisk%20together%20the%20first%20six%20dry%20ingredients%20(the%20flour,%20baking%20soda,%20baking%20powder,%20salt,%20cinnamon,%20and%20nutmeg).%20Then%20stir%20in%20the%20chocolate%20chips.%3C/p%3E%3Cp%3E3.%20In%20a%20medium/large%20bowl,%20use%20an%20electric%20hand%20mixer%20to%20cream%20together%20the%20bananas%20with%20the%20vanilla,%20Biscoff,%20sugar,%20and%20canola%20oil.%3C/p%3E%3Cp%3E4.%20Add%20the%20wet%20ingredients%20to%20the%20dry%20ingredients,%20and%20mix%20together%20until%20just%20well-incorporated%20(adding%20the%20walnuts%20gradually%20while%20mixing).%3C/p%3E%3Cp%3E5.%20Spoon%20into%20the%20muffin%20tin,%20and%20bake%20for%2020-25%20minutes%20(or%20un
