Simply yummy banana bread and muffin with over ripped banana and nuts. It’s a great breakfast to start your day with. Ingredients:
Serves 4 to 5
1 1/2 cup – Wheat flour
2 large – Eggs
3 no- Ripe bananas (medium/large)
1/2 cup - unsalted butter at room temperature
3/4 cup – Brown sugar/ or regular sugar
1 tsp – Baking soda
1 tbsp – Flax seed powder
1/2 tsp – Salt
1/2 tsp - Vanilla extract
1/4 cup –Walnuts (chopped)
1/4 cup- Raisins
Preparation method:
Grease the loaf pan with butter and dust with flour.Set it aside.Take a mixing bowl, add butter and brown sugar, cream it together.
Add mashed bananas to the butter and sugar mixture. Followed by 2 eggs and blend it well.
In a separate bowl, whisk together 1 1/2 cups of flour, 1 tsp of baking soda, 1 tbsp of flax seed powder and 1/2 tsp of salt then add to batter.
Add 1/2 tsp of vanilla extract and mix in chopped walnuts and raisins. Pour into prepared loaf pan. Bake at 350˚F for 55 to 60 min or until a toothpick inserted into the center comes out clean. Let banana bread rest for 10 min before transferring to a wire rack to cool. With the same batter, I prepared muffins. bake at 350 F for 20 mins. Notes:
Baking time depends on the oven you are using. Mine took exactly 60 minutes to cook.
Flax seed powder is completely optional.
You may replace brown sugar with our regular sugar or honey.
You may replace wheat flour with all purpose flour or maida too.
