Banana Bread with Streusel Nut Topping

My all-time favorite banana bread recipe was unseated when I came across this scrumptious streusel-topped version. A tastier bonus for a bit more effort!

Ingredientes

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoons salt
  • 2 beaten eggs
  • 1 1/2 cups mashed ripe bananas (4 to 5 medium)
  • 1 cup granulated sugar
  • 1/2 cup cooking oil (or melted butter)
  • 1/2 cup chopped walnuts
  • 1 recipe Streusel Nut Topping (see ingredients below)

Direcciones

  1. Grease bottom and one half inch up the sides of one 9x5x3-inch (or two 7 1/2 x 3 1/2 x 2-inch) loaf pans, or line with parchment paper and spray with vegetable oil; set aside.
  2. Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt in medium-large bowl. Make a well in center of flour mixture; set aside.
  3. In medium bowl combine eggs, bananas, granulated sugar and cooking oil.
  4. Pour liquid ingredients into dry ingredients all at once, stirring just until moistened (batter should be lumpy.) Fold in walnuts gently.
  5. Spread batter into prepared pan(s). Sprinkle Streusel Nut Topping over batter (recipe below).
  6. Bake in a 350 degree oven 55-60 minutes for larger pan size, or 40-45 minutes for smaller pans, testing with a toothpick in center to insure doneness (if necessary cover loosely with foil the last 15 minutes of baking to prevent overbrowning.
  7. Cool in pan on wire rack 10 minutes; then remove from pan and cool completely on wire rack. (Wrap and store overnight for ease in slicing.)
  8. STREUSEL NUT TOPPING: In small bowl combine 1/4 cup brown sugar and 3 tablespoons flour. Using pastry blender cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts.
