Banana Brownies with Chocolate Peanut Butter Glaze
Today, the high temperature is going to be -5. That's right folks...5 below zero, for the high! It not only is super cold outside, it is windy as all get out! I know the only thing that is going to warm me up today is a pan of brownies! In my freezer, I always have at least 2 baggies filled with 3 or more over ripe bananas. I decided to add some bananas to my brownie recipe and they turned out great! The brownies turned out very moist. The chocolate peanut butter glaze put these brownies over the top!! Banana Brownies with Chocolate Peanut Butter Glaze definitely warmed me up:)
- Banana Brownies with Chocolate Peanut Butter Glaze:
- 1/2 cup butter, melted and cooled
- 1 cup sugar
- 3 T baking cocoa
- 2 eggs, lightly beaten
- 1 T cold coffee
- 1 t vanilla extract
- 1/2 cup flour
- 1 t baking powder
- 1/4 t salt
- 1 cup mashed ripe bananas, if using frozen, thaw and drain before adding
- 1/2 cup semi-sweet chocolate chips
In small bowl, combine flour, baking powder and salt.
In a medium bowl, combine butter, sugar and cocoa. Stir in the eggs, coffee and vanilla.
Blend in the flour mixture.
Stir in the bananas and chocolate chips.
Pour into a greased 11 x 7 inch baking pan.
Bake at 350 for 40-45 minutes. Do not over bake.
When cool drizzle with icing
Chocolate Peanut Butter Glaze:
1/2 cup semi-sweet chocolate chips
1 T peanut butter
In a microwave-safe bowl, combine chocolate chips and peanut butter. Microwave on high for 1 minute or until chips are melted. Stir until smooth. Spread over brownies.
