Receta Banana Buttermilk Waffles
Homemade waffles are such a treat especially on the weekends. They are so much fluffier and tastier than their frozen store bought cousins. You do need a waffle iron but other than that, they are pretty easy to make. Only a few simple ingredients are required and you will be rewarded with a stack of warm delicious waffles enough to feed the entire family. They will surely thank you for them.
A waffle iron is definitely a worth while investment. There are a variety of irons out there but I do like those Belgian waffle irons. They usually measure 8 inches in diameter and have a higher grid pattern, forming deep pockets and larger squares in the waffles. The waffles made in these irons tend to be lighter and thicker with a soft moist interior and crispy exterior.
When it comes to waffles, I like to experiment with a variety of flours and flavors. Since there is gluten sensitivity at our home, I prefer to make gluten-free waffles so that everyone in the family can enjoy them. A favorite at our house are these Buckwheat Waffles which I have made many times. Recently, I also made some Chai Gingerbread Pumpkin Waffles using Heart Smart Bisquick, a pancake and baking mix. These waffles were not gluten free but they were very good. The recipe is posted on my other blog, Tea Tattler.
For this particular recipe, I used gluten free whole oat flour, one of my favorite flours for baking. I flavored the waffles with a couple of over ripen bananas and buttermilk. These banana buttermilk waffles turned out to be deliciously light and fluffy with a slightly tangy flavor. They had a crispy texture on the outside, yet were soft and moist on the inside.
Banana Buttermilk Waffles
Ingredients
- 2 cups whole oat flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ½ tsp salt
- 2 large eggs
- 2½ cups low fat buttermilk
- 2 tbsp brown sugar
- ¼ cup vegetable oil
- 2 large ripe bananas, mashed
Instructions
In a large bowl, combine oat flour, baking powder, cinnamon, cloves, and salt.
In another bowl, beat eggs and brown sugar until light and fluffy. Add buttermilk, oil, and mashed banana. Beat until combine. Pour this mixture into flour mixture. Stir to get ingredients well incorporated and a smooth batter forms.
Pour ½ cup batter onto a pre-heated waffle iron and cook until golden brown, about 3 to 4 minutes.
Serve immediately with butter, maple syrup, or jam.2.2
