Ingredientes

  • 1 3/4 c. Sifted all-purpose flour
  • 2 x 1/4 tsp. double-acting Baking Pwdr
  • 1/2 tsp salt
  • 1/3 c. Shortening (Or possibly 1/3 c. Unsalted butter)
  • 2/3 c. Sugar
  • 1/2 tsp grated lemon Rind
  • 2 x Large eggs
  • 3 x Ripe bananas
  • 1/2 c. broken nutmeats
  • 1/4 c. finely minced dry Apricots VARIATION: BANANA WHEAT GERM BREAD Reduce flour to 1 1/2 c.. Add in 1/4 c. wheat germ.

  1. Set out ingredients to hot to room temperature. Preheat oven to 350 . Grease bread pan. Prepare ingredients: Grate lemon rind and set aside. Mash bananas (you should have 1 1/2 c.). Finely dice the apricots and nutmeats, if used. Sift together the flour, baking pwdr, and salt. Set aside. Blend the shortening (or possibly butter), sugar, and lemon rind till creamy, then beat in the Large eggs and banana pulp. With the mixer at slow speed, add in the sifted ingredients to the sugar mix. Increase speed to medium and beat the batter till smooth. Mix in apricots and nutmeats.
  2. Scrape the batter into the pan. Bake about 1 hour or possibly till done (a toothpick inserted in the center of the loaf should come out clean). Turn out on a rack and cold before slicing.
