  • 3 x RIPE BANANAS, PEELED AND Minced
  • 1/2 c. Chopped ONIONS
  • 1/3 c. RAISINS, (DARK Or possibly Golden brown)
  • 1/3 c. MOLASSES
  • 1/3 c. TOMATO PASTE
  • 1/4 c. HONEY
  • 1/4 c. DARK RUM
  • 1 Tbsp. Chopped GARLIC
  • 1 x JALAPENO PEPPER, SEEDED AND Chopped
  • 1 tsp SALT
  • 1/2 tsp Grnd CINNAMON
  • 1/2 tsp RED PEPPER FLAKES
  • 1/4 tsp Grnd RED PEPPER
  • 1/8 tsp Grnd NUTMEG
  • 1/8 tsp Grnd CLOVES

  2. IN A LARGE SAUCEPAN COMBINE ALL INGREDIENTS OVER MEDIUM HEAT. BRING TO A BOIL. REDUCE HEAT TO LOW, AND SIMMER UNCOVERED, FOR 20 TO 30 Min, STIRRING FREQUENTLY Or possibly Till SYRUPY. TRANSFER Mix TO A BLENDER Or possibly FOOD PROCESSOR FITTED WITH A STEEL BLADE; PUREE Till SMOOTH. Chill UNUSED SAUCE UP TO 2 WEEKS.
  3. USES: AS A TABLE SAUCE FOR DIPPING GRILLED SHRIMP, TOPPING HAMBURGERS Or possibly MOST ANY MEAT, CHICKEN Or possibly SEAFOOD.
