VALENTINES DAY SPECIAL RECIPES DAY 1

I don’t know whose idea it was to pour the floury batter on a hot griddle and then watched with bated breadth as the pancakes turns into fluffy, flipping goodies, and I bet the most loved fun part is to observe the air bubbles slowly escaping the hot batter, leaving the tiny holes behind which gives the pancakes its characteristic texture. In our house, DH is solely responsible for introducing the pancakes in our breakfast menu, he actually introduced it to me, as it never (don’t know why) occurred to me that the sweet fluffy pancakes can be so damnably delicious, can be made in thousand different flavours and that the most simplest one can be so addictive.

We are one pancake obsessed couple, serve us the simple or with six different flavours we will lap it up at once, and still in love with the first pancakes that we made together, though it was far from perfect, bit lumpy, misshapen, got burnt the other side but we still loved it, and I bet it was good as the others. In a famished belly, you will love the first pancake even better than the rest.

Hungry as we are, for more flavours, for more different ways to enjoy the pancakes like with crispy fried chicken, pancakes are the most loved breakfast meal that we enjoyed making together, and since the first day of its inception in our house to this day, I am still not able to remember its measurements, I always look up to him, and I keep surprising him every time by bringing out different flavours in it, sometimes even with different flours to make it a notch higher in health quotient.

This time it is banana pancakes, fun way to make the simple pancakes sounds yummy without too much effort, with scatters of chocolate chips thrown here and there, yes you read it right, why chocolates can not be part of this extravagant breakfast ! and then dunked in maple syrup and served with some toasted pecans on top of it. It is his favourite flavour, and mine too, well he loved pecans on almost everything !

In a large mixing bowl, combine flour, sugar, baking powder, cinnamon and salt.

In a separate bowl, mix together egg, vanilla and oil.

In a separate bowl, fork the ripe bananas, and mashed them as much as possible, add the milk and blend it well.

Next stir the banana mixture, egg -vanilla-oil into the flour mixture and blend it well. Batter will be slightly lumpy.

Stir in the chocolate chips in the batter.

Heat a lightly oiled griddle or frying pan over medium high heat.

Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake.

Cook until pancakes are golden brown on both sides.

Serve hot with drizzle of maple syrup and top it with toasted pecans.

Quick notes

Make ahead – make the batter a day before, stir in the chocolate chips just before making the pancakes. Saves lots of time !
