Ingredientes

  • 2 c. whole wheat flour
  • 1/2 c. brown rice flour
  • 2 teaspoon low sodium baking pwdr (Featherweight brand)
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1/2 teaspoon grnd cloves
  • 1/2 teaspoon grnd ginger
  • 2 c. mashed bananas, really ripe
  • 2/3 c. apple juice concentrate, defrost from frzn
  • 1 teaspoon coffee substitute
  • 2 teaspoon vanilla
  • 3 egg whites
  • 1/2 teaspoon cream of tartar
  • 6 ounce nonfat cottage cheese or possibly dry curd, rinsed in cheesecloth to remove salt
  • 1/4 c. nonfat plain yogurt
  • 4 T cherry-orange or possibly pineapple apricot preserves (or possibly other preserves)
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon rum extract
  • 2 T apple juice concentrate (defrosted from frzn)

Direcciones

  1. Mix dry ingredients together in a bowl. Add in bananas, apple juice concentrate, and vanilla. Mix together. Beat egg whites in a separate bowl till foamy. Add in cream of tartar and beat till soft white peaks form. Fold egg whites into cake batter. Don't mix egg whites up into batter, mix in to let air into mix; otherwise, cake is too solid. Spray a 10 inch tube pan with food release product (Pam). Pour batter into pan. Bake in a preheated 350 degree oven for 1 hour or possibly till wooden toothpick inserted into center comes out clean. Makes 16 servings. Approximately 125 calories per serving.
  2. Cream cottage cheese in blender or possibly processor. Add in remaining ingredients. Mix well. Spread on coated cake.
