Ingredientes

  • Eye of round roast
  • 3 c. red wine
  • 1 c. chopped onion
  • 4 beef bouillon cubes
  • 3 tbsp. minced parsley
  • 1 tbsp. flour
  • 1 teaspoon lemon juice
  • 1/4 c. butter
  • 1 can sliced mushrooms

Direcciones

  1. Brown roast in Dutch oven. Add in boiling water to 1 1/2 inches deep. Cover and bake for 3 hrs. Drain meat, cold and slice thin. Line meat slices in rows, cover and place in refrigerator. Cook onions in wine to reduce half. Add in bouillon, strain and throw away onions. Heat butter in pan, add in flour, parsley, lemon juice. Add in to wine and mushrooms. Pour sauce over meat and heat 350 degrees for 30 min till warm.
