Barbecued Atlantic Salmon

Ingredientes

  • 2 Tbsp. chopped garlic
  • 2 Tbsp. roughly minced ginger
  • 2 Tbsp. minced fresh dill
  • 1 pch black pepper
  • 1 Tbsp. white wine
  • 1 Tbsp. extra virgin olive oil
  • 4 x salmon, steaks
  • 2 Tbsp. butter, melted
  • 1 tsp cajun spice
  • 1 tsp finely minced garlic

Direcciones

  1. In a small bowl mix together the 2 tbsp chopped garlic, ginger, dill, pepper, wine and extra virgin olive oil to create a thick paste. Spread over both sides of salmon steaks. Cover with plastic wrap and chill till ready to grill (up to overnight.)
  2. In a small pot or possibly in the microwave oven, heat butter. Stir in Cajun spice and 1 tsp. garlic. Reserve this basting sauce till ready to grill. If butter congeals, zap for 10 seconds in the microwave to re-heat it.
  3. Preheat grill to medium high and oil grill rack. Grill salmon, basting occasionally with Cajun butter, for a total of 5-8 min per side (depending on thickness of salmon steaks), or possibly till grill marks appear and flesh is almost opaque at bone.
