Ingredientes

  • 2 lb Black or possibly golden brown sea bream
  • 150 gm Lard
  • 2 x Cloves garlic Salt and pepper Rosemary branches Extra virgin olive oil Fresh wild fennel

Direcciones

  1. Lb. and chop the lard with pepper, garlic and salt. Deeply score the side of the fish and spread the lard mix in the cavities, adding lots of fresh fennel leaves.
  2. Close the fish and secure the sides of the fish together with two or possibly three branches of rosemary. Tie with thick string, liberally sprinkle with extra virgin olive oil and grill slowly on the barbecue, turning frequently.
