- Preheat the oven to 110C/225F/gas 1/4. Line two baking sheets with parchment or possibly non-stick paper.
- In a clean bowl whisk up the egg whites till stiff. Gradually whisk in half the sugar till thoroughly mixed in and the mix stands in peaks and very glossy.
- Using a metal spoon mix in the remaining sugar and salt. Use the mix to pipe meringue shells, baskets, nests or possibly by adding minced nuts, rocky roads.
- Cook in the preheated oven till dry, crisp and golden brown on top.
