Basic Meringues

Ingredientes

  • 3 lrg Egg whites
  • 75 gm Caster sugar
  • 75 gm Icing sugar, (sift the two sugars together) Generous healthy pinch of salt

Direcciones

  1. Preheat the oven to 110C/225F/gas 1/4. Line two baking sheets with parchment or possibly non-stick paper.
  2. In a clean bowl whisk up the egg whites till stiff. Gradually whisk in half the sugar till thoroughly mixed in and the mix stands in peaks and very glossy.
  3. Using a metal spoon mix in the remaining sugar and salt. Use the mix to pipe meringue shells, baskets, nests or possibly by adding minced nuts, rocky roads.
  4. Cook in the preheated oven till dry, crisp and golden brown on top.
