Basmati Rice With Peas And Pine Nuts

Ingredientes

  • 2 Tbsp. peanut oil
  • 1 c. finely minced red onion
  • 1 tsp curry pwdr Salt and pepper to taste
  • 2 c. basmati rice
  • 1/4 c. apple juice
  • 2 c. water
  • 1 c. fresh or possibly frzn green peas
  • 2 Tbsp. toasted pine nuts

Direcciones

  1. Heat oil in a large skillet over medium-high heat. Add in onion, and sprinkle with curry pwdr, salt, and pepper. Cook 3 min, stirring occasionally.
  2. Add in rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 min, till rice is tender and water is absorbed.
  3. If using fresh peas, stir them into the rice halfway through the final cooking time. If using frzn, add in MC_Busted by Karen C. Greenlee
