- Place the lowfat milk in a heavy sausepan and bring to the boil, stirring constantly. Keep stirring and simmer till the lowfat milk reduces to one-third its original quantity.
- Add in the sugar and simmer for 5 more min. Now add in the crushed cardamoms.
- Dissolve the saffron in 1/4 c. warm lowfat milk and add in to the lowfat milk pudding. Stir thoroughly.
- Garnish with the minced pistachios. Serve chilled.
