Ingredientes

  • 1 1/2 tsp grnd cumin
  • 1 c. fresh lime juice
  • 1/2 c. fresh orange juice
  • 2 lb bay scallops
  • 1 x warm red chili pepper finely minced
  • 1/4 c. red onion finely minced
  • 3 x ripe plum tomatoes seeded and minced
  • 1 x red bell pepper seeded and minced
  • 3 x green onions minced
  • 1 c. minced fresh cilantro
  • 1 x lime sliced, for garnish

Direcciones

  1. Stir the cumin into the lime and orange juices and pour over the scallops.
  2. Stir in the minced chili pepper and red onion. Cover and chill for at least 2 hrs.
  3. Just before serving, drain the scallops and mix with the minced tomatoes, bell pepper, green onions and cilantro. Garnish with the slices of lime.
