Ingredientes

  • 1 1/2 tsp Grnd cumin
  • 1 c. Fresh lime juice
  • 1/2 c. Fresh orange juice
  • 2 lb Bay scallops
  • 1 x Warm red chili pepper *
  • 1/4 c. Red onion, finely minced
  • 3 x Ripe plum tomatoes **
  • 1 x Red pepper, seeded & minced
  • 3 x Scallions, minced
  • 1 c. Cilantro, minced
  • 1 x Lime, sliced, for garnish

Direcciones

  1. Note: Warm red chili pepper should be finely minced.** Plum tomatoes should be seeded and minced.
  2. Stir the cumin into the lime and orange juices and pour over the scallops.
  3. Stir in the minced chili pepper and red onion. Cover and chill for at least 2 hrs.
  4. Just before serving, drain the scallops and mix with the minced tomatoes, sweet pepper, scallions and cilantro. Garnish with the slices of lime.
