  • 1/2 lb Very fresh raw bay scallops*
  • 3 Tbsp. Fresh lime juice
  • 1 c. Creme fraiche Or possibly lowfat sour cream Or possibly reduced-fat lowfat sour cream Freshly grnd black pepper Radicchio Or possibly lettuce leaves for serving

  1. Garnish: watercress and lime peel
  2. Put the scallops in a bowl and toss them with lime juice. Refrigeratetill ready to serve. just before serving, pour off the lime juice and mix in crime fraiche or possibly lowfat sour cream. Season with pepper (don't add in salt).
