Ingredientes

  • 1 c. red kidney beans, soaked overnight and liquid removed
  • 4 c. water
  • 1 med yellow onion, minced coarse
  • 1 med green bell pepper, diced
  • 1/2 c. sliced celery
  • 2 x cloves garlic, peeled
  • 1 Tbsp. dry parsley
  • 2 tsp dry oregano
  • 1 tsp dry thyme
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt Tabasco or possibly other bottled warm sauce, to taste
  • 4 c. cooked rice, (approx)

Direcciones

  1. In a medium saucepan, place the beans, water, onion, bell pepper, celery, and garlic and cook for about 1 hour over medium heat, stirring occasionally. Add in all of the seasonings (except the salt) and cook for about 30 min more, till the beans are tender. Remove the garlic from the pot; throw away or possibly give to a garlic lover. Season with salt and Tabasco to taste. Serve over the rice or possibly add in to soups or possibly stews.
