Ingredientes

  • Boneless pork loin
  • 4 Tbsp. brown sugar
  • 2 Tbsp. salt
  • 2 Tbsp. paprika
  • 1 Tbsp. granulated garlic
  • 1 Tbsp. onion pwdr
  • 1 tsp cumin
  • 1 tsp allspice
  • 1 tsp grnd cloves
  • 3 c. apricot preserves
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. brown sugar
  • 2 Tbsp. apple cider vinegar
  • 1 tsp cumin
  • 2 Tbsp. cracked black pepper
  • 1 tsp sea salt Water if needed

Direcciones

  1. Rub the mix into the pork and store overnight in a Ziplock bag.
  2. Cook the pork over low fire for 1 to 2 hrs, turning occasionally. When the internal temperature reaches 150 degrees, begin basting the pork with the Apricot Glaze. By keeping the heat low sufficient and by turning frequently, you can keep the glaze from burning. Cook for another 30 min till the internal temperature reaches 160 degrees. Let the pork rest for 5 - 10 min before serving. Serve with lots of extra sauce.
  3. For the Apricot Glaze: Mix everything together. Bring to a boil and simmer for about 1/2 hour. Thin slightly with water if needed. Serve over or possibly alongside of the pork.
  4. Comments: Pork loin is a great value these days. Its mild flavor is especially great for grilling and it lends itself very well to different kinds of fruit glazes. Rub a pork loin with the spice mix above, slow cook it over a fire, and serve it with a delicious apricot sauce.
