%3C/p%3E%3Cp%3EThis%20weekend%20was%20predicted%20to%20be%20dry,%20so%20we%20broke%20out%20the%20Weber%20to%20try%20slow%20cook%20BBQ%20ribs.%20%20Although%20we%20have%20had%20great%20success%20BBQing%20ribs%20over%20the%20grill%20producing%20sticky%20juicy%20firm%20ribs,%20the%20ultimate%20goals%20is%20meat%20falling%20off%20the%20bone.%20%20The%20lovely%20boyfreinds%20tireless%20internet%20research%20showed%20that%20indirect%20heat%20and%20slow%20cooking%20is%20the%20secret.%3C/p%3E%3Cp%3EWith%20the%20ribs%20roasting,%20%20I%20was%20thinking%20about%20accompaniments%20,%20another%20downside%20of%20the%20cold%20wet%20summer%20has%20been%20that%20my%20homegrown%20tomatoes%20have%20failed%20to%20ripen.%20But%20every%20cloud%20has%20a%20silver%20lining%20and%20it%20does%20give%20me%20the%20opportunity%20to%20try%20the%20eponymous%20recipe%20from%20one%20of%20my%20%20favourite%20films%20%20Fried%20Green%20Tomatoes%20at%20the%20WhistleStop%20Cafe%20(incidentally%20%20based%20on%20a%20book%20by%20one%20of%20my%20favourite%20authors%20Fannie%20Flagg)%3C/p%3E%3Cp%3EI%20was%20growing%20both%20beefsteak%20and%20plum%20tomatoes%20,%20the%20beefsteak%20tomatoes%20had%20grown%20large%20producing%202%20inch%20wide%20fruit.%20Since%20they%20are%20unripe%20I%20thought%20the%20tomatoes%20might%20be%20sour%20but%20instead%20they%20were%20juicy%20with%20a%20crispy%20spicy%20outside.%20Next%20I%20am%20making%20some%20Gree%3C/p%3E%3Cp%3En%20Tomato%20Chutney.%3C/p%3E%3Cp%3EFry%20the%20tomatoes%20for%20a%20minute%20on%20each%20side.%3C/p%3E%3Cp%3EPlace%20on%20kitchen%20towel.%3C/p%3E%3Cp%3ESweetcorn%20is%20plentiful%20at%20the%20moment%20and%20easy%20to%20cook%20over%20hot%20coals%20.%20In%2020%20minutes%20it%20steams%20in%20it%E2%80%99s%20own%20husks%20for%20a%20great%20starter%20before%20the%20main%20event.%3C/p%3E%3Cp%3ETrue%20to%20his%20Pitmaster%20form,%20%20the%20lovely%20bofyreind%20turned%20out%20perfect%20ribs%20%20reminiscent%20of%20the%20best%20hog%20roasts%20,%20crispy%20chewy%20on%20the%20outside%20and%20meltingly%20soft%20on%20the%20inside.%20Many%20recipes%20suggested%20wrapping%20the%20ribs%20in%20foil%20halfway%20through%20cooking%20,%20but%20having%20a%20tray%20of%20water%20in%20the%20BBQ%20during%20cooking%20kept%20things%20moist.%3C/p%3E%3Cp%3EI%20cannot%20wait%20to%20play%20around%20with%20more%20spice%20rubs%20so%20I%20am%20hoping%20for%20an%20Indian%20summer.%3C/p%3E%3Cp%3EBBQ%20Pork%20Ribs%3C/p%3E%3Cp%3ERib%20Rub%3C/p%3E%3Cp%3E1%20tbsp%20of%20smoked%20paprika%3C/p%3E%3Cp%3E1%20tsp%20of%20chilli%20flakes%3C/p%3E%3Cp%3E1tsp%20of%20fennel%20seed%3C/p%3E%3Cp%3E1tsp%20of%20sea%20salt%3C/p%3E%3Cp%3E1tsp%20of%20oregano%3C/p%3E%3Cp%3EMix%20together%20the%20rub%3C/p%3E%3Cp%3ERub%20if%20all%20over%20the%20pork%20ribs%20and%20leave%20for%20several%20hours%3C/p%3E%3Cp%3ESoak%20wood%20chips%20in%20a%20bowl%20of%20water%3C/p%3E%3Cp%3EOnce%20the%20coals%20are%20white%20hot%20,%20push%20them%20to%20the%20sides%20of%20the%20BBQ%20(%20held%20back%20by%20cages%20if%20available)%3C/p%3E%3Cp%3EPut%20a%20tray%20of%20water%20between%20the%20coals%20%20and%20put%20the%20ribs%20on%20the%20grill%20over%20the%20water%3C/p%3E%3Cp%3EPut%20a%20handful%20of%20woodchips%20on%20the%20coals%20%20and%20put%20the%20lid%20on%20the%20BBQ%20cook%20for%202.5hours%20,%20turning%20halfway%20through.%3C/p%3E%3Cp%3EThis%20entry%20was%20posted%20in%20BBQ,%20Meals,%20Pork,%20Season,%20September.%20Bookmark%20the%20permalink.%3C/p%3E){kind=link}
