,%20but%20I%20did%20spy%20a%20packet%20of%20cheddar%20cheese%20curds.%20The%20substitution%20actually%20worked%20out%20better%20than%20I%20thought,%20and%20maybe%20better%20than%20the%20regular%20cheese%20would've.%20Surprisingly,%20the%20curds%20melted%20beautifully%20and%20just%20enough.%3C/p%3E%3Cp%3EA%20recently%20received%20a%20couple%20of%20coupons%20for%20Stubb's%20BBQ%20Sauce.%20Stubb's%20is%20no%20stranger%20in%20my%20kitchen.%20I've%20been%20using%20it%20for%20a%20few%20years%20now,%20I%20love%20the%20consistency%20of%20their%20sauces.%20Not%20so%20thin%20that%20it%20runs%20right%20off%20your%20food,%20yet%20not%20so%20thick%20that%20you%20feel%20like%20you're%20applying%20a%20layer%20of%20frosting%20to%20your%20steak.%3C/p%3E%3Cp%3EI%20usually%20buy%20the%20Original%20recipe,%20knowing%20I%20like%20and%20trust%20it%20for%20what%20I'm%20going%20to%20use%20it%20for.%20But%20when%20you%20get%20a%20couple%20of%20coupons%20for%20free%20stuff,%20you%20get%20to%20experiment%20with%20some%20abandon%20and%20try%20something%20new%20with%20no%20regrets.%3C/p%3E%3Cp%3EThat's%20how%20I%20came%20to%20fall%20in%20love%20with%20their%20Sweet%20Heat%20Legendary%20Bar-B-Q%20Sauce.%20There's%20a%20slight%20tang%20the%20rides%20along%20with%20the%20sweetness,%20and%20it's%20perfectly%20balanced.%20Then%20the%20heat%20joins%20in%20about%20a%20half%20a%20second%20later%20and%20takes%20it%20all%20to%20a%20new%20level.%20I'm%20not%20talking%20about%20the%20kind%20of%20heat%20that%20makes%20you%20grab%20for%20the%20nearest%20glass%20of%20water...I'm%20talking%20about%20a%20subtle%20warmth...just%20a%20few%20degrees,%20that%20accentuates%20the%20smokey%20under%20notes%20of%20chipotle%20and%20red%20chili.%3C/p%3E%3Cp%3ENow%20picture%20this%20with%20the%20tangy%20sweet%20flavor%20of%20pineapple%20and%20creamy%20smooth%20melted%20cheese%20that's%20all%20pulled%20together%20with%20a%20juicy%20tenderloin.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it.%20My%20new%20favorite%20BBQ%20recipe.%3C/p%3E%3Cp%3EWhich%20really%20isn't%20much%20of%20a%20recipe,%20per-say.%20But%20I'll%20give%20you%20a%20list%20of%20what%20you%20need%20and%20what%20to%20do%20with%20it.%20How%20much%20you%20use%20of%20each%20ingredient%20will%20depend%20on%20the%20size%20of%20your%20tenderloin.%3C/p%3E%3Cp%3EBBQ%20Pork%20Tenderloin%20Stuffed%20with%20Pineapple%20and%20Cheese%20Curds%3C/p%3E%3Cp%3EStubb's%20Sweet%20Heat%20Legendary%20Bar-B-Q%20Sauce%3C/p%3E%3Cp%3ECooking%20twine%3C/p%3E%3Cp%3EGet%20your%20coals%20started.%3C/p%3E%3Cp%3EPlace%20a%20good%20amount%20of%20cheese%20down%20the%20center%20of%20your%20tenderloin%20and%20then%20spoon%20some%20pineapple%20over%20the%20cheese.%3C/p%3E%3Cp%3ERoll%20it%20up%20tight%20and%20tie%20it%20up%20with%20some%20twine,%20making%20sure%20everything%20is%20tucked%20in%20and%20can't%20get%20away.%3C/p%3E%3Cp%3EOnce%20the%20coals%20are%20good%20and%20hot,%20scoop%20them%20over%20to%20one%20side%20of%20your%20grill%20so%20that%20you%20have%20a%20direct%20heat%20side,%20and%20an%20indirect%20heat%20side.%20Place%20the%20rolled%20and%20trussed%20tenderloin%20over%20the%20side%20that's%20directly%20over%20the%20coals%20and%20seer%20it,%20turning%20as%20you%20go%20until%20all%20of%20the%20sides%20are%20good%20and%20brown.%3C/p%3E%3Cp%3EMove%20the%20tenderloin%20to%20the%20other%20side%20of%20the%20grill%20where%20there%20are%20no%20coals,%20brush%20it%20with%20some%20bbq%20sauce,%20cover%20the%20grill%20and%20let%20it%20cook%20for%20about%2015%20-%2020%20minutes,%20turning%20occasionally.%3C/p%3E%3Cp%3EJust%20before%20removing%20from%20the%20grill,%20brush%20on%20some%20more%20bbq%20sauce.%3C/p%3E%3Cp%3ELet%20it%20rest%20for%20about%205%20or%2010%20minutes%20before%20removing%20the%20twine%20and%20slicing%3C/p%3E%3Cp%3EDon't%20worry%20if%20some%20of%20the%20stuff%20inside%20leaks%20out.%20Think%20of%20it%20as%20a%20tease...a%20sneak%20peek%20at%20what's%20to%20come.%3C/p%3E%3Cp%3EBecause%20you%20know%20it's%20going%20to%20be%20good.%20The%20acidic%20pineapple%20helps%20tenderize%20the%20meat.%20The%20cheese....well,%20'nough%20said%20there.%20You%20can't%20ever%20go%20wrong%20when%20cheese%20is%20involved.%20And%20that%20bbq%20sauce.%20Well,%20let%20me%20just%20say%20it%20was%20the%20perfect%20compliment%20to%20everything%20going%20on,%20on%20my%20grill.%3C/p%3E%3Cp%3EServe%20it%20with%20a%20side%20of%20grilled%20corn%20and%20some%20homemade%20macaroni%20and%20cheese%20and%20you've%20got%20yourself%20a%20good%20ole%20down%20home%20American%20dinner.%3C/p%3E%3Cp%3EEnjoy%20your%20celebration%20of%20our%20nations%20Independence%20Day!%3C/p%3E){kind=link}
