Ingredientes

  • 4 x Inch tart shells, cooked (4 to 5)
  • 2 lb Sweet potatoes, roasted and peeled
  • 2 x Oranges, zested and juiced
  • 1/2 c. Light brown sugar
  • 1 pch Grnd cloves
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1 pch Salt
  • 16 x Jumbo shrimp, peeled in center, head and tail intact, about 2 pounds
  • 2 tsp Seafood seasoning
  • 1 tsp Finely minced rosemary
  • 1 Tbsp. Finely minced garlic
  • 1 tsp Cracked black pepper
  • 4 Tbsp. Unsalted butter, up to 6
  • 1/4 c. Beer
  • 1 Tbsp. Worcestershire sauce
  • 1 x Lemons, juiced
  • 1/2 c. Seafood stock

Direcciones

  1. Process ingredients till blended. Taste for salt and sugar. Keep hot till ready to serve.
  2. BBQ SHRIMP:Brown small amount of butter in skillet, add in pepper, rosemary and shrimp; add in seasoning, and garlic; saute/fry over high heat till shrimp are pink.
  3. Add in Worcestershire, beer and stock; bring to a boil and allow liquid to reduce.
  4. Finish sauce by emulsifying butter into it.
  5. TO SERVE:Fill the tart shells with the hot sweet potato mix; arrange shrimp on top and then pour the sauce over and around the pie.
  6. Garnish with a sprig of fresh rosemary.
