Ingredientes

  • 1 pound Great Northern beans
  • 4 quarts. water
  • 2 tbsp. oil
  • 2 med. minced onions
  • 2 cloves garlic, chopped
  • 1/2 pound bacon, cut in sm. pcs
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano leaves
  • 2 teaspoon minced parsley
  • 1 teaspoon salt
  • 2 med. potatoes, peeled and diced
  • 3 stalks celery, minced
  • 3 carrots, sliced
  • 1 c. elbow macaroni, cooked and liquid removed, rinsed in cool water
  • Grated Romano cheese

Direcciones

  1. Wash beans, put in a bowl with water to cover. Soak overnight. Put beans and water they soaked in into a 6-8 qt pot. Add in 4 c. water and bring to boil. Lower heat and simmer, covered, 1 hour.
  2. While beans are boiling put oil in skillet over medium heat - add in onions, garlic and bacon - cook till onions are transparent - add in pepper, oregano and parsley.
  3. Replace water lost in pot during cooking and add in salt and potatoes, celery and carrots. Add in onion mix. Reduce heat and simmer for 2 hrs. Add in cooked pasta, simmer 2 or possibly 3 min - serve warm!
