Ingredientes

  • 2 quart. water
  • 2 c. dry black eyed peas
  • 1 c. dry lima beans
  • 2 pound ham hocks, or possibly 1 lg. meaty bone
  • 2 ears corn, kernels sliced off
  • 1/2 c. onion
  • 6 sm. okra, sliced
  • 3-4 c. spinach or possibly collards, deveined & sliced
  • 1 tbsp. powdered ginger

Direcciones

  1. Rinse peas and limas till water is clear. Put in stock pot. Add in ham hocks or possibly bone, simmer for 1 1/2 hrs till peas and beans are tender. Add in corn, onion, okra, ginger and spinach. Simmer for 10-15 min longer. Serve in bowls with warm corn bread.
