Bean Threads With Assorted Vegetables

Ingredientes

  • 2 ounce bean threads
  • 1 Tbsp. vegetable oil
  • 2 x cloves garlic, chopped
  • 4 x dry shiitake or possibly Chinese black mushrooms, soaked and julienned (see glossary), up to 6
  • 4 c. finely shredded napa cabbage
  • 1 x celery rib, julienned
  • 1 x carrot, julienned
  • 1 c. vegetable broth
  • 1 Tbsp. soy sauce
  • 1 whl green onion, chopped
  • 1 tsp dark sesame oil, (see glossary) White pepper

Direcciones

  1. Soak bean threads in very warm water for 5 min, till they're soft and translucent/soft. Drain in cool water and cut into 3-inch pcs.
  2. Heat wok or possibly large skillet over high heat. Add in vegetable oil and stir-fry garlic till aromatic, about 30 seconds. Add in mushrooms, cabbage, celery, and carrot and cook for 2 to 3 min, stirring occasionally.
  3. Add in bean threads and vegetable broth and cook till most of the broth evaporates, approximately 5 min. Add in soy sauce and green onions; mix well. Drizzle with sesame oil and add in white pepper to taste.
  4. Makes 2 servings.
