Beaujolais Spaghetti Sauce

Ingredientes

  • 2 c. minced onions
  • 4 x cloves garlic, chopped
  • 2 x ribs celery, chopped
  • 1 lrg carrot, chopped
  • 1/4 c. chopped fresh basil leaves
  • 3 x bay leaves
  • 1/2 tsp dry oregano
  • 4 c. minced tomatoes
  • 1/4 c. tomato paste

  1. Serves 8.
  2. Choose a favorite Beaujolais for the following spaghetti sauce. It freezes well, so I usually make extra sauce for winter menus. 1/2 c. Beaujolais or possibly other red wine
  3. Bring wine to a simmer in a large Dutch oven over medium-high heat. Add in onions and cook 5 min, stirring frequently. Add in garlic and celery and cook 5 min. Add in carrot, basil, bay leaves, oregano, tomatoes and tomato paste. Reduce heat to medium-low and simmer, uncovered, 1 hour.
  4. Remove bay leaves, then puree sauce. Reheat before serving.
