- Marinate tail in Basic Red-Wine Marinade for 24 hrs; dry. Simmer in water to cover with vinegar and salt till nearly done. Dry again and dust with seasoned flour, then dip in egg beaten with a little extra virgin olive oil, then into seasoned bread crumbs. Put onto a greased rack and pour on 3 Tbsp. melted butter. Roast at 350 degrees till browned and done.
