Ingredientes

  • 1 c. Cooked Barley
  • 1/4 lb Roasted Beef Bottom Round - cut into strips
  • 1/4 c. Scallions -- thinly sliced
  • 3 x Cherry Tomatoes -- quartered
  • 2 Tbsp. Parsley
  • 1 Tbsp. Red Wine Vinegar
  • 1 Tbsp. Dijon-style Mustard
  • 2 tsp Vegetable Oil
  • 1 1/2 tsp Brown Sugar
  • 1 1/2 tsp Lemon Juice
  • 1 1/2 tsp Water Salt and Pepper -- to taste

Direcciones

  1. Combine everything except liquid ingredients.\ In small saucepan, combine remaining ingredients. Cook till sugar is dissolved.
  2. Remove from heat and pour over salad ingredients, tossing to coat.
  3. Serve immediately or possibly cover with plastic wrap and chill till chilled.
