%3C/p%3E%3Cp%3ECounting%20my%20blessings%20that%20most%20days%20will%20bring%20mid-day%20temps%20into%20the%20high%2060's%20(or%20maybe%20even%20the%20mid%2070's!),%20our%20daily%20walks%20at%20the%20beach%20bring%20sights%20of%20surfers%20(full%20wet%20suit%20season),%20beach%20volley%20ball%20and%20soaring%20birds.%20%20The%20gardens%20at%20Magee%20Park%20are%20flush%20with%20the%20growth%20of%20new%20blooms%20on%20the%20the%20rose%20bushes,%20and%20I'm%20taking%20that%20as%20a%20strong%20signal%20that%20spring%20is%20just%20around%20the%20corner.%3C/p%3E%3Cp%3EWinter%20in%20Carlsbad,%20CAHowever...%20around%204%20PM%20that%20brilliant%20sun%20making%20its%20way%20low%20across%20the%20horizon%20dips%20below%20the%20hill%20behind%20our%20house%20and%20the%20chill%20returns.%20%20Living%20in%20San%20Diego,%20the%20house%20builders%20felt%20no%20need%20to%20install%20pricier%20windows%20that%20might%20actually%20hold%20out%20the%20cold,%20hence%20as%20temps%20dip%20outside,%20the%20inside%20temps%20dip%20right%20along%20with%20them.%20%20On%20occasion,%20one%20sitting%20close%20to%20a%20window%20will%20actually%20feel%20a%20draft%20enough%20to%20move%20their%20hair.%20%20That's%20when%20we%20turn%20up%20the%20heat...%20and%20that's%20when%20we%20put%20soup%20on%20the%20stove%20to%20warm%20up%20our%20chilly%20bones.%3C/p%3E%3Cp%3EHaving%20turned%20up%20her%20nose%20to%20soup%20for%20the%20first%2012%20years%20of%20her%20life,%20Liv%20has%20discovered%20that%20some%20soups%20are%20indeed%20good%20food.%20%20Lentil%20was%20a%20surprise%20favorite%20at%20a%20local%20restaurant%20recently%20and%20an%20Italian%20Ministrone%20has%20also%20received%20two%20thumbs%20up.%20%20Thinking%20I%20had%20another%20winner%20for%20her%20I%20stewed%20up%20one%20of%20my%20own%20favorites,%20Beef%20and%20Barley%20with%20Mushroom,%20and%20I%20couldn't%20wait%20to%20get%20it%20to%20the%20table.%3C/p%3E%3Cp%3ESimmering%20the%20beef%20and%20mushrooms%20in%20the%20afternoon%20I%20had%20two%20diverse%20opinions%20to%20the%20aromas%20wafting%20through%20our%20drafty%20house.%20%20First%20appeared%20my%20son%20with%20a%20comment%20of,%20%22Ewww!!%20%20What%20is%20that%20smell??%22.%20%20To%20which%20I%20responded,%20%22Well...%20looks%20like%20it's%20not%20going%20to%20be%20your%20dinner.%22%3C/p%3E%3Cp%3ELiv%20appeared%20moments%20later%20with%20a%20big%20smile%20on%20her%20face%20and%20an%20exclamation%20of,%20%22Wow!!%20%20What%20is%20that%20awesome%20smell??%22.%20%20Describing%20my%20simmering%20brew,%20her%20face%20kept%20its%20smile%20and%20she%20walked%20away%20looking%20forward%20to%20dinner%20and%20eager%20to%20discovering%20barley.%3C/p%3E%3Cp%3ERunning%20a%20last%20minute%20errand,%20I%20put%20the%20soup%20on%20hold.%20%20Coming%20home%20however,%20I%20noticed%20a%20somewhat%20guilty%20look%20on%20my%20positively%20starving%20girl's%20face,%20and%20peeking%20into%20the%20beef%20and%20mushroom%20simmer%20I%20found%20my%20soup%20had%20become%20mostly%20a%20mushroom%20soup%20as%20%22someone%22%20had%20stolen%20most%20of%20the%20tender%20beef%20chunks%20which%20had%20been%20patiently%20waiting%20for%20the%20barley.%20%20She%20looked%20up%20and%20mentioned%20something%20about%20the%20beef%20being%20%22awesome%22%20as%20I%20added%20the%20barley%20for%20the%20remaining%20simmer.%3C/p%3E%3Cp%3ESome%2040%20minutes%20later,%20the%20tender%20barley%20filled%20the%20pot%20along%20with%20tons%20of%20mushrooms%20and%20the%20few%20remaining%20chunks%20of%20beef.%20%20Ladling%20up%20our%20steaming%20soup%20we%20sat%20down%20to%20dinner%20and%20discovered%20that%20while%20Liv%20loves%20the%20beef%20part%20of%20Beef%20and%20Barley%20Soup,%20the%20barley%20part%20is%20not%20a%20favorite.%3C/p%3E%3Cp%3EMy%20husband%20and%20I%20on%20the%20other%20hand,%20found%20the%20soup%20to%20be%20a%20wonderful%20treat,%20and%20one%20that%20indeed%20warmed%20us%20to%20our%20chilly%20toes.%3C/p%3E%3Cp%3EBeef%20and%20Barley%20Soup%20with%20Mushrooms%3C/p%3E%3Cp%3EAdapted%20from%20one%20of%20my%20all%20time%20favorite%20cookbooks,%20Great%20Food/Great%20Beer,%20this%20is%20one%20of%20the%20recipes%20I%20return%20to%20time%20and%20again.%20%20Altering%20it%20a%20bit%20each%20time%20with%20different%20ingredients%20we%20happen%20to%20have%20on%20hand,%20the%20beef%20simmers%20to%20tender%20perfection,%20and%20if%20you%20can%20keep%20the%20teenager%20away%20from%20her%20beloved%20beef,%20you%20will%20be%20rewarded%20with%20a%20fabulous%20hearty%20bowl%20of%20Beef%20and%20Barley%20Soup.%3C/p%3E%3Cp%3Eadapted%20from%20The%20Anheuser-Busch%20Cookbook:%20Great%20Food,%20Great%20Beer%3C/p%3E%3Cp%3EPlace%20a%20large%20Dutch%20Oven%20on%20the%20stove%20and%20heat%20the%20olive%20oil%20over%20medium-high%20heat.%20%20Add%20the%20beef,%20onion,%20and%20garlic,%20cooking%20until%20lightly%20browned.%3C/p%3E%3Cp%3EAdd%20one%20cup%20of%20the%20beef%20broth%20to%20the%20pan,%20scraping%20the%20pan%20bottom%20to%20loosen%20any%20browned%20bits%20stuck%20to%20the%20bottom.%20%20Add%20the%203%20cups%20sliced%20mushrooms,%20then%20add%20another%20cup%20of%20broth%20and%20the%20dried%20thyme.%20%20Add%20water%20to%20cover,%20and%20heat%20to%20a%20nice%20simmer.%20%20Cover,%20and%20keep%20an%20eye%20to%20make%20sure%20the%20soup%20does%20not%20boil.%20%20Simmer%20until%20the%20beef%20is%20very%20tender%20(we%20simmered%20ours%20for%20about%202%20hours)%20adding%20water%20if%20necessary.%3C/p%3E%3Cp%3EStir%20in%20the%20barley,%20additional%20mushrooms%20and%20carrots,%20adding%20additional%20water%20or%20beef%20broth%20as%20needed%20for%20a%20nice%20soupy%20mixture.%20%20(As%20the%20barley%20cooks,%20you%20will%20most%20likely%20need%20more%20liquid).%20%20Cook%20until%20the%20barley%20is%20tender.%3C/p%3E%3Cp%3ELadle%20into%20bowls,%20top%20with%20freshly%20ground%20pepper%20and%20a%20sprinkle%20of%20parsley.%3C/p%3E%3Cp%3E***Liv%20Life%20Note:%20%20For%20my%20family,%20I%20try%20to%20reduce%20salt,%20hence%20we%20only%20use%202%20cups%20of%20beef%20broth%20in%20our%20soup.%20%20If%20salt%20is%20not%20a%20concern%20for%20you,%20you%20may%20use%20all%20beef%20broth%20in%20place%20of%20the%20water.%3C/p%3E%3Cp%3EAdditional%20Note%20-%20I%20happen%20to%20love%20mushrooms,%20and%20add%20the%20second%20batch%20towards%20the%20end%20so%20we%20have%20some%20very%20tender%20cooked%20mushrooms%20and%20a%20different%20texture%20of%20the%20not%20so%20cooked%20mushrooms%20upon%20serving.%3C/p%3E){kind=link}
