This Beef and Mushroom Kheema with Rhubarb uses a seasonal and local ingredient to stand in for tamarind (the rhubarb!) and is so easy and absolutely delicious!

%20and%20is%20so%20easy%20and%20absolutely%20delicious!%3C/p%3E%3Cp%3EThis%20blog%20is%20a%20lot%20of%20things%E2%80%93source%20of%20recipes%20for%20you,%20the%20reader;%20recipe%20collection%20for%20my%20daughters%20when%20they%20grow%20up;%20musings%20about%20anything%20to%20do%20with%20food;%20something%20kind%20of%20like%20a%20journal%E2%80%93but%20not%20as%20personal,%20and%20hopefully%20entertaining%20for%20you,%20the%20reader.%20Why%20do%20I%20bring%20this%20up?%20Because%20I%20am%20home%20in%20Ohio%20and%20determined%20to%20keep%20writing%20about%20Italy.%20Think%20of%20it%20as%20me%20sharing%20photos%20or%20a%20slideshow%20after%20returning%20home%20from%20vacation%20circa%201985.%20Only%20hopefully%20more%20entertaining%E2%80%93and%20you%20can%20scroll%20down%20quickly%20if%20you%20get%20bored!%3C/p%3E%3Cp%3EThe%20next%20beach%20we%20headed%20to%20was%20Le%20Castella,%20in%20the%20province%20of%20Crotone,%20on%20the%20Ionian%20coast.%20The%20big%20draw%20was%20twofold,%20an%20ancient%20fortress%20and%20a%20chance%20to%20say%20we%20dipped%20our%20toes%20in%20the%20Ionian%20Sea.%3C/p%3E%3Cp%3EHere%20the%20water%20was%20also%20very%20clear,%20but%20with%20a%20sandy%20bottom,%20so%20not%20the%20piercing%20crystal%20clarity%20of%20Tropea.%20Sammy%20in%20particular%20enjoyed%20stomping%20on%20the%20sandy%20sea%20bottom%20and%20making%20the%20water%20cloudy%E2%80%93I%20think%20just%20because%20it%20bothered%20me!%20The%20beach%20also%20sloped%20gently%20here,%20more%20like%20what%20I%20am%20used%20to%20on%20the%20American%20Atlantic%20coast,%20instead%20of%20dropping%20off%20quickly%20into%20deep%20sea.%20The%20girls%20both%20adored%20Le%20Castella.%20I%20adored%20being%20at%20the%20beach%20and%20looking%20at%20a%20fortress%20seemingly%20rising%20from%20the%20sea%20in%20the%20background.%3C/p%3E%3Cp%3EAfter%20sunbathing%20and%20swimming%20for%20the%20day,%20my%20mom%20and%20the%20girls%20and%20I%20got%20gelato%20and%20then%20visited%20the%20fortress%20itself.%20The%20roots%20of%20a%20defensive%20fortress%20at%20that%20spot%20go%20back%20to%204th%20century%20B.C.,%20Magna%20Graecia,%20but%20the%20structure%20of%20the%20current%20fortress%20was%20built%20primarily%20by%20the%20Aragonese%20in%20the%2016th%20century%20around%20the%20existing%20foundation.%20Much%20like%20Paestum,%20the%20castle%20was%20amazing%20especially%20because%20we%20had%20it%20to%20ourselves.%20Its%20primary%20purpose%20was%20defense,%20and%20the%20girls%20and%20I%20imagined%20shooting%20arrows%20out%20of%20the%20tiny%20windows%20high%20up%20in%20the%20tower%20against%20attackers%20by%20sea!%20We%20went%20to%20the%20top%E2%80%93I%20am%20looking%20down%20at%20my%20mom%20from%20the%20top%20of%20the%20tower%20in%20the%20picture%202%20from%20the%20left%20and%202%20from%20the%20top.%20The%20stairs%20to%20get%20there%E2%80%93a%20very%20tight,%20crumbly%20spiral%E2%80%93were%20nothing%20short%20of%20nerve%20wracking!%20All%20of%20the%20pictures%20in%20the%20collage%20were%20taken%20either%20of%20the%20fortress%20or%20from%20the%20fortress,%20whether%20inside%20or%20on%20top.%3C/p%3E%3Cp%3ESammy%20told%20me%20when%20we%20left%20the%20fortress%20that%20she%20had%20never%20imagined%20she%20would%20get%20to%20be%20in%20a%20castle%20like%20something%20out%20of%20a%20Disney%20movie.%20To%20be%20fair,%20it%20was%20not%20that%20much%20like%20a%20Disney%20movie,%20being%20primarily%20a%20military%20stronghold,%20but%20the%20look%20on%20her%20face%20when%20she%20told%20me%20that%20made%20the%202%20hour%20drive%20to%20get%20there%20completely%20worth%20it!%3C/p%3E%3Cp%3ENow%20about%20this%20curry%E2%80%A6%20I%20made%20this%20right%20before%20we%20went%20to%20Italy,%20with%20the%20extra%20rhubarb%20I%20had%20after%20making%20that%20scrumptious%20Upside%20Down%20Rhubarb%20Cake.%20I%20have%20always%20pushed%20for%20using%20rhubarb%20as%20a%20locally%20grown%20substitute%20for%20tamarind,%20but%20this%20was%20the%20first%20time%20I%20tried%20it%20in%20a%20curry.%20If%20you%20are%20not%20familiar%20with%20tamarind,%20it%20is%20an%20inedibly%20sour%20fruit%20used%20in%20a%20lot%20of%20Latin%20American%20and%20Indian%20cooking.%20Kinda%20like%20rhubarb!%20I%20also%20had%20extra%20mushrooms%20hanging%20around%E2%80%93we%20love%20the%20Beech%20and%20Bunapi%20mushrooms,%20but%20you%20can%20use%20whatever%20is%20easiest%20for%20you%20to%20get%20a%20hold%20of.%20Likewise,%20I%20did%20not%20want%20to%20shop%20for%20anything%20at%20this%20point%E2%80%93we%20were%20leaving%20for%206%20weeks%20in%20a%20matter%20of%20days%E2%80%93so%20I%20garnished%20with%20mint%20sprigs,%20but%20chopped%20cilantro%20would%20work%20wonderfully.%3C/p%3E%3Cp%3EBeef%20and%20Mushroom%20Kheema%20with%20Rhubarb%20%20%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Entree%20Cuisine:%20Indian%20%20%20Ingredients%3C/p%3E%3Cp%3E2%20T%20vegetable%20oil%204%20whole%20cloves%201%20bay%20leaf%204%20whole%20black%20peppercorns%201%203-inch%20cinnamon%20(cassia)%20stick%203%20medium%20onions,%20chopped%206-8%20garlic%20cloves,%20minced%202-inch%20piece%20of%20ginger,%20minced%201%20large%20rhubarb%20stalk,%20or%202%20medium-small%20ones,%20chopped%20%C2%BC%20t%20turmeric%20%C2%BD%20t%20paprika%20or%20Cayenne%20pepper,%20depending%20on%20heat%20tolerance%20300%20g%20(10%20oz)%20beech%20or%20bunapi%20mushrooms,%20chopped%205%20small-medium%20tomatoes,%20chopped%202%20t%20cumin%201%20t%20garam%20masala%202%20teaspoons%20ground%20coriander%201%C2%BD%20lbs%20ground%20beef%20garam%20masala%20to%20taste%20For%20serving:%20cooked%20Basmati%20rice%20chopped%20cilantro%20mint%20sprigs%20yogurt%20tamarind%20chutney%20(or%20any%20chutney)%20%20%20Instructions%3C/p%3E%3Cp%3EHeat%20the%20vegetable%20oil%20in%20a%20large%20skillet%20with%20deep%20sides%20over%20medium%20high%20heat.%20Add%20the%20cloves,%20bay%20leaf,%20peppercorns%20and%20cinnamon%20stick.%20Shake%20the%20skillet%20every%2015-20%20seconds%20and%20let%20the%20spices%20roast%20until%20they%20are%20fragrant%20and%20darkening,%20about%202%20minutes.%20Add%20the%20chopped%20onions%20with%20a%20pinch%20of%20salt.%20Cook%20until%20caramelizing,%2010-15%20minutes.%20Add%20the%20garlic%20and%20ginger%20and%20continue%20to%20cook,%20stirring%20occasionally.%20Splash%20a%20few%20tablespoons%20of%20water%20in%20as%20needed%20to%20prevent%20scorching%20or%20sticking.%20When%20the%20onions%20are%20caramelized,%20another%205-10%20minutes,%20add%20the%20chopped%20rhubarb.%20Stir%20and%20cook%20for%205%20minutes.%20Add%20the%20mushrooms%20with%20the%20turmeric%20and%20paprika%20(or%20cayenne).%20Also%20add%20a%20pinch%20of%20salt.%20Stir.%20Cook%20until%20the%20mushrooms%20are%20releasing%20their%20water,%205-10%20minutes.%20Add%20the%20tomatoes%20with%20the%20cumin,%20coriander%20and%201%20teaspoon%20of%20garam%20masala.%20Bring%20to%20a%20boil,%20stirring%20occasionally,%20and%20let%20the%20tomatoes%20cook%20down%20a%20bit%20and%20thicken,%205-10%20minutes.%20Add%20the%20ground%20beef%20with%20a%20few%20pinches%20of%20salt.%20Cook,%20stirring%20until%20the%20ground%20beef%20has%20browned.%20Taste%20for%20more%20salt%20or%20garam%20masala.%20Serve%20with%20Basmati%20rice%20and%20garnish%20with%20mint%20or%20cilantro.%20You%20could%20also%20offer%20yogurt%20and%20chutney.%20%203.3.3070%3C/p%3E){kind=link}
