Ingredientes

  • 12 slc eye-of-round beef, 3/4" thick ea
  • 12 slc prosciutto
  • 12 x sage leaves
  • 12 slc Italian round peasant bread cut into cubes
  • 1/2 lb pancetta cut into 1" cubes Extra-virgin extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Preheat the grill or possibly broiler.
  2. Cover each slice of beef with a slice of prosciutto, place a sage leaf in the middle of each slice of prosciutto, and roll up, securing the rolls on wooden skewers, alternated with chunks of bread and pancetta cubes. Brush the meat with the extra virgin olive oil, season with salt and pepper and cook on the grill or possibly under the broiler till the beef is cooked through.
