Receta Beef, Cabbage, Feta and Pimiento on Barley
I may have said this before, but…..
When one is cooking for two, buying a cabbage requires planning.
I get two or three or four dishes out of one head.
I usually use it once for a first course, once or twice as a vegetable side dish and the rest gets put into stir-fries, skillet dinners or quiches.
Fortunately, we both like cabbage.
Beef, Cabbage, Feta and Pimiento on Barley
Total time: 30 minutes
Instructions:
- 12oz (30gr) ground beef
- 2 cups sliced Savoy cabbage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4oz (120gr) pimientoes, chopped
- 3oz, (90gr) feta, crumbled
- 1/3 cup Greek olives, chopped
- 1 tbs tomato paste
- 1 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 2 tsp olive oil
- 1/2 cup (4oz, 120gr) beef stock
- Barley:
- 1/2 cup (2.8oz, 80gr) quick-cooking barley
- 1/2 cup (4oz, 120ml) beef stock
- 1/2 cup (4oz, 120ml) water
Instructions:
Cook barley in stock and water, covered, until done.
Heat oil in large skillet. Add onion, chili powder, cumin and stir-fry 5 minutes.
Add beef, garlic and stir-fry 5 minutes longer, breaking the beef up as it browns.
Add cabbage, stock, tomato paste, oregano and stir well.
Reduce heat, cover and simmer for 15 minutes.
Add pimientos, olives and heat through.
Add feta, stir briefly and remove from heat.
Spoon over barley to serve.
Mon mari has been playing with lawn mowers and trimmers and roto-tillers and stuff so nothing new is happening in the house.
On the other hand, my potager is now ready for spring planting.
So I planted the onions and shallots.
I planted around 100 white onions, 150 red onions and 50 shallots.
The onions are tiny little things and easy to plant. But every morning I have to go around and tuck some of them back in the ground. I don’t know if birds disturb them or worms or what, but about 10% of them get popped out of there holes every night until the roots take hold.
In addition to a photo of dirt I thought I’d show you some flowers….. Above are hyacinths and plum blossoms.
Below are quince blossoms.
It’s a strange spring….. These flowers don’t normally bloom at the same time.
The quince blossoms started blooming more than a month ago, but very sparsely. The warm weather must have been what they needed as they are now covered in blossoms.
Maybe I’ll even get quince again.
