Ingredientes

  • This recipe calls for a beef cut -- chuck-eye steak - which's new to the meat case.
  • 1 1/2 lb boneless beef chuck-eye steak, cut 1 inch thick (4 steaks)
  • 2 Tbsp. dry Caribbean jerk seasoning
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. lime juice Salt and pepper to taste
  • 2 x mangoes, diced
  • 1/2 c. minced green bell pepper
  • 1 Tbsp. minced fresh cilantro
  • 1 1/2 tsp dry Caribbean jerk seasoning

Direcciones

  1. Place steaks in a re-seal-able plastic bag or possibly glass dish. Combine 2 Tbsp. jerk seasoning, oil, lime juice, salt and pepper; pour over steaks.
  2. Seal the bag or possibly cover the dish and marinate in refrigerator for 1 to 6 hrs, turning occasionally. Remove steaks from marinade and place on grid over medium coals. Grill 14 to 20 min for medium-rare (135 degrees F) to medium (145 degrees F), turning once.
  3. To make salsa: While steaks are grilling, combine mangoes, green pepper, cilantro and 1 1/2 tsp. jerk seasoning, tossing lightly. Serve steaks with salsa.
