,%20a%20variety%20of%20different%20thickeners%20(corn%20starch,%20flour,%20tapioca),%20and%20all%20sorts%20of%20non-traditional%20stew%20ingredients.%20%20What%E2%80%99s%20the%20point,%20you%20wonder?%20%20After%20all,%20Beef%20Stew%20recipes%20are%20all%20over%20the%20Internet%20already.%20%20Do%20we%20really%20need%20another?%20%20The%20thing%20is,%20I%20wanted%20to%20make%20a%20new%20type%20of%20beef%20stew.%20%20I%20wanted%20something%20with%20a%20unique%20flavor%20AND%20with%20a%20higher%20nutritional%20profile.%20%20I%20wanted%20to%20put%20my%20own%20stamp%20on%20it.%20%20I%20finally%20figured%20it%20all%20out%20last%20week,%20and%20now%20I%20can%20proudly%20introduce%20to%20you%20my%20very%20own%20Beef%20Stew%20with%20Kale,%20Rosemary,%20and%20Sweet%20Potatoes.%3C/p%3E%3Cp%3EWhen%20I%20began%20this%20journey,%20I%20was%20making%20a%20stew%20in%20the%20oven%20that%20you%20baked%20for%20literally%205%20hours%20(uncovered).%20%20This%20is%20a%20long%20time%20to%20run%20an%20oven%20in%20my%20opinion,%20I%20don%E2%80%99t%20care%20how%20low%20the%20temperature%20is.%20%20The%20stew%20meat%20softened%20effectively%20enough,%20but%20there%20was%20no%20liquid%20at%20the%20end%20of%20it.%20The%20flavors%20also%20seemed%20underdeveloped%20in%20my%20opinion.%20%20I%20decided%20I%20would%20rather%20make%20stew%20in%20a%20crock%20pot.%20%20That%20way,%20it%20could%20cook%20all%20day%20without%20heating%20up%20the%20house.%20%20I%20would%20add%20broth%20this%20time%20and%20play%20with%20the%20components%20too.%20%20Regular%20potatoes%20vs.%20sweet%20potatoes,%20adding%20or%20removing%20canned%20tomatoes,%20chopped%20onions%20vs.%20pearl%20onions.%20%20I%20also%20needed%20something%20green.%3C/p%3E%3Cp%3EDuring%20both%20of%20these%20trials%20I%20also%20experimented%20with%20thickeners.%20%20Cornstarch%20or%20flour%20are%20natural%20thickeners,%20but%20neither%20of%20them%20is%20particular%20spectacular%20as%20far%20as%20nutrition%20goes.%20%20Plus,%20anyone%20cutting%20carbs%20or%20gluten%20suddenly%20can%E2%80%99t%20eat%20beef%20stew%20for%20something%20as%20minor%20as%20a%20thickener.%20%20So,%20I%20investigated%20tapioca,%20a%20more%20nutritious%20option.%20%20Along%20the%20way,%20%20I%20learned%20that%20if%20food%20is%20thickened%20with%20tapioca,%20it%20will%20retain%20its%20%E2%80%9Cthickened%E2%80%9D%20state%20even%20after%20being%20frozen.%20%20This%20is%20NOT%20true%20with%20sauces%20or%20gravies%20thickened%20with%20corn%20starch!%20%20Interesting!%20%20The%20normal%20way%20to%20thicken%20with%20tapioca%20is%20to%20make%20a%20slurry%20%E2%80%93%20you%20grind%20the%20tapioca%20beads%20and%20combine%20them%20with%20water%20and%20pour%20it%20in%20to%20your%20sauce.%20%20This%20was%20essentially%20just%20fine,%20but%20weird%20to%20me.%20%20Sometimes%20the%20beads%20didn%E2%80%99t%20fully%20dissolve,%20ground%20or%20not.%20%20Plus%20tapioca%20is%20somewhat%20expensive%20to%20be%20used%20so%20infrequently.%20%20Not%20to%20mention,%20I%20have%20a%20tiny%20grinder%20to%20use%20for%20spices%20and%20what%20not,%20but%20not%20everyone%20does.%20%20It%E2%80%99s%20all%20just%20exhausting.%3C/p%3E%3Cp%3EI%20finally%20decided%20to%20make%20beef%20stew%20on%20the%20stove%20top.%20%20I%20browned%20the%20meat,%20swirled%20in%20some%20beef%20broth,%20and%20started%20with%20the%20usual%20arsenal%20of%20stew%20vegetables.%20%20By%20now%20I%20knew%20I%20liked%20lots%20of%20carrots%20and%20pearl%20onions%20(no%20chopping%20required,%20just%20toss%20them%20in%20frozen,%20plus%20they%20look%20attractive).%20%20My%20real%20stroke%20of%20genius%20was%20to%20add%20in%20chopped%20sweet%20potato.%20%20This%20ultimately%20breaks%20down%20quite%20a%20bit%20so%20you%20don%E2%80%99t%20even%20really%20see%20it%20anymore,%20but%20it%20thickens%20the%20sauce!%20%20It%E2%80%99s%20perfect,%20not%20to%20mention%20gluten%20free!%20%20Plus%20it%20adds%20a%20lovely%20warm%20orange%20color.%20%20Along%20with%20a%20bay%20leaf,%20I%20threw%20in%20a%20rather%20large%20sprig%20of%20fresh%20rosemary.%20%20I%20always%20figured%20rosemary%20paired%20well%20with%20beef,%20and%20the%20flavor%20it%20lends%20here%20is%20truly%20outstanding.%20%20No%20matter%20what%20beef%20stew%20recipe%20you%20make,%20try%20adding%20fresh%20rosemary%20next%20time.%20%20It%20was%20simply%20Meant%20To%20Be.%3C/p%3E%3Cp%3ELast,%20I%20threw%20in%20a%20handful%20of%20chopped%20fresh%20kale%20leaves.%20%20Kale%20appears%20in%20some%20really%20great%20soups,%20notably%20Zuppa%20Toscana%20at%20the%20Olive%20Garden,%20so%20why%20not%20have%20it%20in%20beef%20stew?%20%20It%20tastes%20good,%20looks%20pretty,%20and%20it%20is%20good%20for%20you%20too.%20%20We%20are%20always%20trying%20to%20eat%20more%20vegetables,%20aren%E2%80%99t%20we?%20%20I%20also%20tossed%20in%20some%20frozen%20peas,%20CJ%E2%80%99s%20favorite%20vegetable.%20%20Now,%20HERE%20finally%20was%20a%20beef%20stew%20I%20could%20be%20proud%20of!%3C/p%3E%3Cp%3EBeef%20Stew%20with%20Kale,%20Rosemary,%20and%20Sweet%20Potatoes%3C/p%
