Receta Beef Stuffed Zucchini

Ingredientes
- 3 (8 ounce. each) med. zucchini
- 1 pound grnd beef
- 1 sm. onion, diced
- Vegetable oil
- 1/4 teaspoon oregano leaves
- 1/4 teaspoon pepper
- 1 (15 ounce.) can tomato sauce
- 1 (4 ounce.) Mozzarella cheese
- 3/4 teaspoon salt
- 1/4 c. water
Direcciones
- Cut each zucchini lengthwise in half. Scoop out center. Leave 1/4 to 1/2 inch thick shell. Dice up scoop out zucchini. In a 12 inch skillet over medium high heat, cook grnd beef, onion and diced zucchini till meat is browned and onion and zucchini are tender, stirring occasionally. Add in vegetables if necessary. Stir in oregano, pepper, half tomato sauce, half cheese and salt. Remove skillet form heat. Into each zucchini shell put mix. In same skillet stir water, sauce, and salt. Arrange zucchini in pan. Heat to boiling. Cover and cook till done. Sprinkle cheese over zucchini.
