Beef Tips in a Brandy Sauce
- 2 beef tenderloin tips (about 6 ounces each 1 to 1½ inches thick each)
- Salt
- 1 tablespoon coarsely ground black pepper
- 1 tablespoons extra-virgin olive oil
- 1 shallot, sliced
- 1 large garlic clove, chopped
- 2 ounces Brandy
- ¾ cup beef stock
- ¼ cup plain Greek Yogurt
- 2 tablespoons flat-leaf parsley, chopped
Season both sides of the steaks with some salt, then sprinkle one side of the steaks with the coarsely ground pepper and press it in with your fingers.
Preheat a large skillet over medium-high heat with the olive oil,
Add the steaks peppered side down and cook them for 4 minutes.
Turn over and cook 3 minutes more for medium-rare — cook a minute longer on each side for medium to medium-well.
Remove steaks to a plate and cover loosely with aluminum foil to keep them warm while they rest.
Return the skillet to the heat with a drizzle more oil if necessary.
add the shallots, garlic and a little salt. Cook, stirring frequently, for 3-4 minutes. Remove skillet from heat, add the Brandy then return it to the burner and let it flame up.
Once the flame dies down, add the stock and yogurt and cook a few more minutes.
Add the parsley to the sauce and then pour it over the steaks and serve
It’s not to often that I eat beef. I love it, but red meat is secondary on my list. Seafood and poultry are my number choices. But the hubby loves a good steak. I usually don’t even try to attempt to make him steak because he makes a mean filet mignon and an incredible Beef Wellington.
But there comes a time when I must try to venture out of my comfort zone. This recipe is a great romantic dish for your sweetheart if they are meat eaters.
The brandy really added depth of flavor to the steak and it was lip smacking.
