Beef Vegetable Soup (Stew)

Ingredientes

  • 2 pound grnd chuck
  • 1 lg. onion, minced
  • 3 lg. potatoes, diced
  • 2 boxes frzn mixed vegetables (or possibly 1 lg. bag)
  • 2 #2 cans tomato sauce
  • 1 can tomatoes
  • 3 teaspoon salt (or possibly more)
  • Pepper to taste

Direcciones

  1. Brown grnd beef and onions in a large pot (Dutch oven) in 1 c. water. Add in diced potatoes, tomato sauce, tomatoes, salt and pepper. Cook slowly till potatoes are soft. Add in frzn vegetables. Let simmer as long as you wish. Add in more water and/or possibly tomato juice if you like. Serve with warm cornbread.
