Ingredientes

  • 8 ounce beef fillet trimmed, and cut into 1" cubes
  • 2 Tbsp. Chinese rice wine
  • 1 Tbsp. water
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd white pepper Oil for deep frying
  • 1 Tbsp. finely-minced garlic
  • 2 tsp coarsely-crushed black peppercorns
  • 1 tsp crushed Sichuan peppercorns or possibly sansho
  • 2 tsp oyster sauce
  • 2 tsp light soy sauce
  • 1 tsp sesame oil Sliced lettuce for garnish

Direcciones

  1. Put beef in a bowl and sprinkle with wine, water, salt, and white pepper. Massage well for about 30 seconds till all the liquid is absorbed by the beef.
  2. Heat oil and deep-fry the beef over very high heat for 30 seconds. Drain and set aside.
  3. Tip out all but 1 tsp. of oil and stir-fly the garlic for a few seconds, then add in the beef and all remaining ingredients, except for the lettuce. Stir-fry for a few seconds till well mixed and serve immediately on a bed of shredded lettuce.
  4. This recipe yields 4 servings.
