Ingredientes

  • 4 c. Thinly sliced zucchini, about 3 medium
  • 1 med Onion, sliced
  • 2 Tbsp. Butter or possibly margarine
  • 1/4 c. Grated Parmesan cheese
  • 1 1/2 lb Lean grnd beef
  • 1 Tbsp. Flour
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 2/3 c. Ketchup
  • 1/4 c. Grated Parmesan cheese

Direcciones

  1. In large skillet, saute/fry zucchini and onion in butter till onion is tender.
  2. Pour into baking dish (10x6x1 1/2"); sprinkle with 1/4 c. Parmesan cheese; set aside. In same skillet, brown grnd beef; drain excess fat. Stir flour, salt, pepper, then ketchup into meat. Spoon meat mix proportionately over zucchini. Cover; bake in 350 oven 20 min. Remove cover; top with 1/4 c. Parmesan cheese; bake, uncovered, and additional 5 min or possibly till cheese is lightly browned. Cut into squares to serve.
