Today I am entering my recipe in the Harvest Beer challenge hosted by This Gal Cooks and Frugal Foodie Mama. I had so much fun creating recipes using beer. By now you should have seen two beer recipe posts. Both of them were made with Honey Dew Ale. An organic brew, but not a harvest blend.

I decided to make Beer Mashed Cauliflower.

Use the orange-colored cauliflower and everyone will think it has cheese in it. Using beer instead of buttermilk will give it that distinct flavor of the beer of choice. I decided to use Latitude 48 I.P.A. by Samuel Adams. I.P.A. stands for India Pale Ale.

Beer Mashed Cauliflower

In a large pot add the potatoes and boil for about 10 minutes. Add the cauliflower and garlic and continue to boil. Top off the boiling water with ½ cup of the beer.

Reduce heat to a medium low and simmer for about 20 minutes or until the potato and cauliflower can be pierced with a fork.

Drain and transfer to your food processor or blender.

Add the butter and blend, slowly adding about ½ cup of beer until creamy.

Season with salt and pepper.

I absolutely have to tell you, I was sweating this one out. I read many other beer mashed potato recipes on-line to get an idea, but I basically winged it. In the end, they were heavenly! Almost too pretty to eat. Um, wait, not that pretty. LOL. But I served the mashed cauliflower with beer roasted pork chops. It was such a fun adventure and I can’t wait to make other beer recipes now.

Yes, let the beer obsession begin.

Oh, and the best part was tricking the hubby into thinking these were mashed potatoes. It worked too because he absolutely loved them and even had two helpings.
